Ki-Saya is our organic lot from Chiapas, Mexico. The name comes from two words in the Mayan language spoken across the region: Ki, meaning "tasty," and Saayab, meaning "nature." That's it — no invented backstory, just what it is.

Coffee is the most important commercial crop in Chiapas, and has been for generations. It's the main source of income for small producers across the region — about 44% of whom are indigenous, mostly Tzotzil and Tzeltal. We source this lot through Covoya, an importing partner who has worked directly with these growing communities for more than 15 years. That relationship shows up in the cup: farmers here have spent years improving their processing, and now turn out some of the cleanest parchment coffee in Mexico.

You don't need to know any of that to enjoy it. It's clean, reliable, easy to love — the kind of coffee that's good enough to not need a spotlight. Drink it black, iced, French press, drip, whatever's around. But if you're the type who wants the whole story before your first sip, now you have it.
